Avo Denver Omelet Tacos

With mountains of scrambled eggs, sautéed onion, peppers, ham, and avocado, this Denver omelet taco will start your day off right. (Don’t worry, it’s always good — even for flatlanders.)

INSTRUCTIONS

  1. In a medium skillet, heat the avocado oil and sauté onion and pepper until tender, approximately 4-5 minutes. Once cooked, stir into scrambled eggs.
  2. For the tacos: Assemble tacos by evenly distributing egg and vegetable mixture onto cheese wraps. Evenly distribute ham and top with avocado slices.
